Happy first day of Fall, it’s apple time! 465: Irish Apple Cake

Tis the season for cinnamon, apples and crumble-topped snack cakes. I have more baking apples than I can count right now thanks to one of my parents’ apple trees. It made so much fruit this year it almost uprooted itself under the weight. Now we have piles of bright green gold. 🍏

When I first saw this recipe, I thought the word “craic” meant “cake” or something similar, but it actually means a lot of different things including “fun” and “crazy”. Cake is always fun in my humble opinion (and it can definitely get crazy depending how generous gravity is feeling) but the vibe of this apple crumble snack cake is more cozy and comfortable.

The pac-man cake pose might be my favorite.

Really leaning into the blue/teal/green color palette on this one.

It might be an unpopular choice but I tend to leave the skins on my apple chunks in this kinds of cakes. I’ve always been told that most of the nutrients are in the peel so that makes the cake healthier right? I’ll keep telling myself that.

I ate two still-warm slices for lunch, truly the best way to kick off Fall.
