Brb, doubling the Fall vibes by dunking the backs of these maple syrup sugar cookies in chai-spiced white chocolate. 466: Apple Slice Cookies

I’m currently on a roadtrip to Acadia in Maine, dreaming about these adorable apple slice cookies from last week. They would taste even better while leaf peeping! Officially the silliest name ever but I’m truly in awe of these fall colors. I can’t pronounce the name but the Kancamagus Highway felt like a tiny national park all of its own with its blanket of gorgeous colorful leaves and little waterfalls.

Most importantly (at least to my inner baking geek) we got to stop at the King Arthur Flour flagship in Vermont! We had these super soft almond “cloud” cookies and I drooled over all the different sizes of cookie scoops. The on-a-whim roadtrip stop that dreams are made of.

These are the second slice-and-bake designed sugar cookies I’ve done recently (what’s up Christmas twinkle light cookies) but this time I went the illusion route instead of a hidden design revealed as you slice. I’m thinking I’ll do at least one batch a year, probably with a holiday-themed design. Maybe different flavorings in the different dough colors? Stay tuned.

No granulated sugar in this recipe, just maple syrup. Translation: yum flavor, veryy soft dough.

And now to perform the dance of the cookie dough, the classic duo: wooden spoon and silicone spatula.

Off to the fridge for a chilling nap.

They got a lil squat during the slicing process but I’ll take it. Who doesn’t love a chubby apple?

I know sesame seeds are not a proportional apple seed choice, but they get the point across!

I did try mini chocolate chips in a few and while yummy, they missed the visual mark.

I added the chai-spiced white chocolate bottoms as an afterthought post-photoshoot. They tasted a little one-dimensional before dunking and just right afterwards!
