Spooky mascarpone whipped cream candles full of pumpkin spice cake and mini chocolate chips. 467: Pumpkin Spice Candle Cake

Pairs well with fall leaves and a misty day, or at least I think it would but since it’s been 85F here, I can’t confirm. Maybe if I bake more Halloween-themed goodies the weather will take the hint.

I sprayed the lil cake stacks with edible gold glitter to get more of an off-white wax color. (Ignore the fact that I over-whipped my cream… focus on the magic of the lit wick instead!)

When I showed my dad this picture he said the “wax” drips look like elephants, and now I can’t unsee it.

The candles I used as my wicks turned out to be a half inch taller than the actual cake, oops. Not wanting to risk the structural integrity of the tiny leaning tower of cake, I decided to leave them be and simply wait for the wicks to burn down far enough. Unintended meditation break (probably asleep with my eyes open, let’s be honest.)

At this point, I’m not sure where my pumpkin spice cake recipe came from (likely Bon Appetit, Smitten Kitchen or another baking blog) but I list out the details in Pumpkin Cake Truffle post! I cut the ingredients in half this time, and made pumpkin chocolate chip pancakes with the leftover pumpkin. Tis the season!

I upgraded to a sturdier whisk and I’m never going back.

This cake is happy to be baked up in whatever shape or type of pan you throw it in – thick enough to not leak out of springforms, and forgiving enough for detailed bundt pans. Truly a dream of a batter!

Went with two smaller candles in lieu of one giant behemoth. The cake scraps are going into the freezer for future cake pops!

Time to build.
