Happy New Year! Ringing in 2025 in my favorite way: with sparklers and chocolate! # 378: Hot Chocolate Cupcakes

Happy New Year’s Eve! However you’re saying goodbye to 2024, I hope it involves a yummy treat. Obviously I mean something chocolate, but to each their own!

I first attempted lava cakes in 2017, and then their more elegant fudgy cousin the fondant earlier this year. Grab some homemade marshmallows and fire up the mini blow torch, because it’s time for a new version!

I got a hot chocolate Jelly Cat for Christmas and he had to make a cameo. He’s more of a whipped cream guy than a marshmallow guy, but still just happy to be here.

It blows my mind how little flour is involved in these gooey bbs. I only made a fifth of the recipe to end up with two cupcakes instead of a whole lava cake army and it used a whopping two grams of flour.

Translation: barely a sprinkling, more of a nod to the concept of flour.

Jusssst enough to help give the edges structure. It can’t all be lava!

Repurposing leftover homemade marshmallows from Christmas Eve s’mores. Hot tip, using the graham cookies from this bake leads to an elite s’more situation.

The one thing I didn’t think about is how oozey they get once toasted. Transferring them from the pan to the cupcake was an experience… Highly recommend placing them on the cupcakes before torching them!

Chomp. It’s a choose-your-own-adventure: either a classy fork and plate dessert or a very messy handheld treat.
