Prosecco Jelly Cheesecake

Technically this bake is a re-do since I used the same prosecco jelly recipe with a tiny cheesecake in 2020. My unofficial rule on re-dos is that one element has to change OR it can be an exact replica if it’s a redemption bake (if the first time around was a total flop.)

The first version was yummy and held its shape so no redemption needed! To justify a re-do, I used a different fruit in the topping and swapped out the chocolate crust for a chai-spiced shortbread base.

Ok wait I already have a design idea for the next time I want to play with jelly: suspend small cut fruit (blueberries?) in a spiral going up like stairs by pouring the liquid jelly in thin layers to catch each one. Hopefully it doesn’t take me another six years to give it a try!

Chai-spiced sand.

Probably should have made it thinner so it’d be crisper but it’s hard to resist thick shortbread. A shortbread pizookie would be incredible! I’ve seen videos where the baker decorates each triangle slice with a different design. *adding to my never-ending To Bake list*

Someday I’ll get acetate sheets for a smoother finish, but parchment paper works decently too if you don’t mind a few wrinkles in your jelly edges.

Lemon juice and vanilla feel like they shouldn’t work so well together, but vanilla seems to play nicely with almost everyone.

Now for the hard part: cutting strawberries thin enough to shape them into a flower.

Four-ingredient magic: gelatin, water, sugar and prosecco. The wine gives the jelly a sepia tint but the flavor is worth it!

The recipe wisely says to wait 6 hours for it to fully set. But for once my impatience was rewarded and it was completely set after 2 hours!
