Berry Passion Fruit Tiramisu

Rich layers of chambord-soaked cookies and passion fruit curd swirled with mascarpone whipped cream. And a sneaky layer of mini chocolate chips! 441: Berry Passion Fruit Tiramisu

As I wrote the title of this one, it got me thinking: what makes it a tiramisu not a trifle? Is it a classic rectangle vs square, where all squares are rectangles but not all rectangles are squares? In this scenario, trifles are the rectangles and tiramisu is a delicious square. It differentiates itself by soaking the cookie layer, and including a custard/sabayon and mascarpone in the cream layers.

I swapped out the cocoa powder from classic tiramisu for powdered freeze-dried strawberries. But being me, I wanted to add chocolate back in somehow (c’mon, dark chocolate with cream and fruit? Yes please!) I landed on a single layer of mini chocolate chips in the middle for some added texture.

Mason jar tiramisu might be my favorite style, though these hefty bbs are definitely sharing size. The smaller jars I used for my earl grey tea-ramisu were a bit cuter, but they’re all busy holding frozen curd right now.

Baking as a new parent means we’re back to late night baking and using pre-made lady fingers. C’est la vie.

I waffled about using both freeze-dried strawberry and chambord which is black raspberry flavored. Too many berries? Would they clash somehow? The similarities won out in the end.

Freezer stash curd for the win! I still have some mandarin curd as well, but thought it might be a bit too sweet with all the other flavors. Passion fruit brought some much needed zing.

I normally cut the kahlua with coffee for dipping the cookies, so I wasn’t sure what the move was with chambord. It felt a little unhinged to use straight alcohol, but chambord is less sweet and alcohol-forward than kahlua so I went for it.

Hidden treasure.

The only downside to mason jars is trying to get tidy, even layers. Just gotta lean into the rustic charm of the jar.

Holding off on adding strawberry pixie dust to the tops til after their fridge nap. In hindsight, I can’t believe I missed an opportunity to use edible glitter! ✨
