Fluffy lemon cupcakes in their favorite plaid buttercream cardigan. 435: Lemon Plaid Cupcakes

You can only have one if your nails coordinate. Luckily you’ve got a lot of color options!

Feeling a little Dr. Seuss with all the colors and swirls on these buttercream mountains. Also, someone please tell me why plaid is so hard to recreate? It took three tries to come up with a pattern that looked at least somewhat like a classic overlapping plaid. Whew!

While I’m not normally a huge fan of massive amounts of frosting on cupcakes, I had to make an exception for this technique. You pipe a design into a silicone mold and freeze it to hold its shape, then fill the gaps with a base color of frosting.

My base color ended up not filling in all the gaps for a perfectly smooth finish, womp. The solve for next time is probably warming it a bit so it squishes into the gaps more effectively.

Working backwards, prepping the frosting first so it can set in the molds. Luckily the buttercream colors in my freezer stash actually looked nice together!

Can you tell which order my attempts went in? Plaid in the loosest sense.

I had the perfect amount of white buttercream to fill in the molds. *high five*

When you’re making a partial batch of cupcakes, do you snuggle them all next to each other in the pan? Or spread them out to leave the middle slots empty? Feels like a personality test question they should add to Baking Nation.

Growing up, did you rip the bottom of the cupcake off and plop it on top of the frosting to make a sandwich? Or did you just take a big bite and get frosting up your nose?

All hail the cutest blue fridgie ever! It fit two buttercream mountains beautifully without smooshing down the tops. Ten outta ten.
