Miso sesame compound butter and scallion confetti snuggled into a fluffy bun. # 401: Miso Scallion Swirl Buns

Love how the slice shot looks like a lil cumulus cloud!

I got inspired by Edd Kimber’s (theboywhobakes on Instagram) gochujang garlic buns – a swirled savory bun? Yes please! I swapped out the gochujang in the compound butter for a mix of red and white miso pastes and threw in some hot honey to give a tiny kick.

An internal debate raged about whether I should use my basic enriched dough (which is sweet) or try to find one with less sugar to pair better with the savory filling. In the end, the hot honey tipped it over into the salty-sweet realm just enough that I stuck with the dough I know.

I may have just bought a velvet throw pillow shaped like a stick of butter. *evil grin*

I love this dough as a base! It’s not a sticky mess to work with but still turns out with a super soft crumb.

Compound butter sounds much more scientific than soft-butter-mixed-with-yummy-things. In this case, hot honey, toasted sesame oil and red and white miso pastes.

White miso paste is great for when you want a subtle umami flavor, but I wanted the extra oomph that comes with red miso paste. Half/half for the win!

Room temperature butter plays well with others – no cold butter flecks to be found!

Slicing into strips to then twist and swirl up into buns.

This part was messy but fun: hold each end of the strip, gently lift and tap it until it stretches out, and then add a few twists.

All tucked in for a power nap before oven time.

Really pleased with how these rolled up! The weather’s gotten nicer so it was a bit of a race against time to shape them before the filling started to melt out.

Ta-da!

They’re pretty good cold but magical when warmed up (no I did not eat three fresh from the oven, they must’ve gotten lost on their way to the cooling rack.)
