Citrus Slice Linzer Cookies

Rolling into 2025 munching crisp, buttery cookies with a hint of ginger, filled with zingy mandarin curd. # 379: Citrus Slice Linzer Cookies

There’s something so happy about a slice of citrus – maybe because they look like an adorable gap tooth smile? Or probably because I associate them with delicious things.

Either way, I saw this design in Sophie Bamford’s recipe advent series and had to make them ASAP. Her cookies had ground cloves mixed in but since I associate cloves more with the holidays, I pivoted to ginger.

She recommended painting the inside of each cookie with white chocolate to seal them from the moisture in the curd. So obviously I went with dark chocolate instead. (I know, I know – I was thiiis close to a non-chocolate bake! But c’mon: ginger, orange and chocolate? Can’t lose.)

The mandarin orange curd is thanks to the prolific mandarin tree in my sister’s backyard. I made a huge batch in early December and froze it in small portions for bakes throughout January and February. *happy dance*

Cuties! Literally and figuratively. Did you know the Cuties brand uses slightly different types of mandarin oranges throughout the year? They’re mostly clementines, but sometimes also types called tangos and W. Murcotts. The last name took a hard left turn away from cuteness but c’est la vie.

Make sure to pick the biggest egg in the dozen for this one! I weighed the yolk from the first one I cracked and it was only 16g, instead of the 20g the recipe calls for. Womp. There’s so few ingredients in the dough, that the extra 4g of fat would be missed, so back to the egg carton I went. Safe to say I’m having scrambled eggs for breakfast tomorrow.

Next time I’ll actually measure the halfway point, but the ruler was across the room and I was channeling my inner lazy baker.

Wouldn’t these make the cutest coasters if they were clay? I recently got a Jenny Lemons hair clip that’s shaped like a giant slice of grapefruit and I’m in love.

Painting around the tiny seed windows was a pain, but yay chocolate!
