Tiramisu Cookie Cups

Caught that sunbeam jussst right! While most people associate spring time with pastels and those mini Cadbury chocolate eggs, my mind turns to creative ways to combine coffee, chocolate and mascarpone. And no, it’s not because of my chocolate obsession – I have a real reason! Both my mother-in-law and sister-in-law’s birthdays are in mid March and their birthday dessert request for the last several years has been tiramisu.

This year I pivoted to cookie format, using a mini muffin tin to bake up espresso brown sugar cookies with mini chocolate chips. I vote for more cookie cups in life! They’re basically the perfect middle bite of a cookie.

Corn syrup is a secret agent, sneaking in the batter to make the cookies softer and chewier. Even after cooling, they keep some of that fresh-from-the-oven texture. If the internet is to be believed, replacing some of the sugar with corn syrup is similar to using oil instead of butter in cakes: using the version of the ingredient that is liquid at room temperature = a chewier, softer texture in the baked good. More moisture is trapped in the crumb, keeping that “fresh” texture longer (I associate dry with stale – sorry to all the crunchy cookies out there!)

Whenever I’m making a new recipe in a muffin tin, I line some with paper and some with spray oil. There’s nothing sadder than treats refusing the come out of a pan in one piece. The tartlet tins were my back-up back-up plan, and ironically they’re the only ones that didn’t cook. C’est la vie.

Huzzah! The winner: spray oil.

Cue my favorite frosting/topping/filling, mascarpone whipped cream. Four ingredient perfection.

Swoosh.

Confession: I mixed chopped pistachios, mini chocolate chips and orange zest into the extra mascarpone whipped cream and spread it on toast for breakfast. Cannoli toast anyone? Decadent doesn’t even begin to cover it.
